laby told me that i could post here when im making cookies and whatever. i read the read me.

i think nachos fall under whatever.
im gonna make nachos with home made tortilla chips by yours truly next friday.
i'll also be making french toast, omelette's, waffles and misc things while jaminz and mongoose are visiting.

no. alton brown showed me how to make them.

get some yellow corn tortillas from the store. the fresher they are the better this works.
cut them into the chip size.

get a good cooking pot, or a deep wok and fill it with peanut oil
(peanut oil works best because it isnt so harsh on the stomach as veg oil)
turn the heat on med/high
let the oil heat up for about 15 minutes
you can test the oil temp by holding a tortilla partially in the oil. if it sizzles on the tortilla end, the oil is ready.
if the oil is poping while the tortilla is in the pot, turn your burner down a little bit. the oil should not pop at all.
drop in as many as you can with giving them room. (my pot will hold about 6)
get a flat slotted spoon or one of those wire basket things. (http://ecx.images-amazon.com/images/I/5188T6WXX9L._SL500_AA280_.jpg like the big round flat one in this pic)
once the tortilla is dropped in, use your spoon/basket to push it down about 4 times every 5 seconds or so so the cooking on the tortilla is even.
about one-two minutes and then flip it so the other side can cook better.
the chip will not appear dark in the oil, so make sure you dont fry the crap out of them.

give them a drying rack so the oil can run off. and presto! home made chips.
